👩‍🍳Chef Jen Tip

Do you know the secret to getting two meals from one rotisserie chicken?

Absolutely — and it's simpler than you'd think! Meal 1 is the obvious one: shred the breast meat. It's tender, quick-cooking, and perfect for tacos, salads, sandwiches, or grain bowls. You'll get a good dinner out of that alone. Meal 2 is where the magic lives: save the carcass and dark meat for broth or a second dish. The thighs and drumsticks have way more flavor than breast meat, and they're designed to simmer. Shred them for soup, toss into a rice dish, or make a simple braise. Even better — throw that picked-over carcass in a pot with water, aromatics, and a pinch of salt, and you'll have golden homemade stock by tomorrow. That stock is actually more valuable than the chicken itself; it's liquid gold for soups, grains, and sauces all week. The real secret is thinking in two different directions: quick, lean protein from the white meat, and deep, rich flavor from everything else. You're not trying to use the whole bird one way — you're using it two ways. What are you leaning toward — soup with the dark meat, or something else?
